When I cannot sit, I must do. My back injury has me limited, so I’m putting the standing time to good use, getting stuff done and cooking. I had this idea of making a pumpkin spice bagel to top with creamcheese frosting, so today I made it a reality. Here is the recipe – ballpark only, I didn’t measure! My ingredients are organic and natural whenever possible. Use what you like. Make it your own!
Pumpkin Spice Bagel Recipe
4 Large Eggs
1/4C Pumpkin Puree
1.5 C Almond Flour
2 TB Coconut Flour
2tsp baking powder
1/4C monkfruit sweetener
1/4tsp Nutmeg
1 tsp Cinnamon
1tsp vanilla extract
1/4 tsp Himalayan or Sea Salt (I used espresso infused salt)
1. Grease a bagel/donut mold and set aside. Preheat oven to 350°F.
2. Mix all wet ingredients in a small bowl. Mix all dry ingredients in a medium bowl. Add the wet to the dry, mix to combine.
3. Scoop the batter evenly into the prepared mold.
4. Bake for 20-25 minutes until golden brown.
Creamcheese Frosting Recipe
4oz Creamcheese (room temp)
3TB Butter Coconut Oil (I use the one from Thrive. Regular butter works great too!)
1C Powdered Monkfruit Sweetener
2tsp Vanilla Extract
1/4tsp Himalayan or Sea Salt
1. Mix all ingredients vigorously until Frosting is smooth and well combined.
Extra can be stored in the fridge. Thaw before spreading.
